This is your go-to glow-up breakfast. These dreamy Matcha Pancakes are light, fluffy, naturally gluten-free (if you use almond flour), and full of flavour—and they’re just as nourishing as they are pretty.
The nutty richness of almond flour pairs perfectly with the earthy, antioxidant-packed SANRAE Organic Matcha for a feel-good morning moment.
✨ Serves: 6 medium-sized pancakes
Ingredients

1 cup almond flour (or all-purpose/gluten-free flour)

1 tbsp SANRAE Organic Matcha
-
1 tbsp organic cane sugar (optional)
-
½ tsp baking powder
-
Pinch of salt
-
2 eggs (or flax eggs for vegan option)

¼ cup almond milk
-
1 tsp vanilla extract
-
Coconut or olive oil for frying
-
To garnish: Fresh fruit, freeze-dried berries, maple syrup, microgreens, marshmallows, or a final dusting of matcha 🌿
Instructions

In one bowl, whisk together dry ingredients. In another, mix the wet.

Pour wet into dry and stir just until combined—don’t overmix.

Heat a non-stick pan over medium heat and lightly coat with oil.

Scoop batter into the pan. Cook for 2–3 minutes until bubbles form, then flip and cook for another minute until golden.

Serve hot with your favourite toppings and a final flourish of SANRAE Matcha.
